Ingredients:

For the custard:

  • 1 1/2 cups coconut milk
  • 1/2 cup sweet corn kernels (fresh or canned)
  • 2 tablespoons cornstarch
  • 1/4 cup maple syrup or agave nectar
  • 1/4 cup coconut sugar
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon turmeric (optional for color)
  • 1/2 teaspoon pure vanilla extract

For the brulee:

  • 1/4 cup coconut sugar

Instructions:

1. Preheat oven to 325°F (163°C).

2. In a blender, blend coconut milk and sweet corn kernels until smooth.

3. In a medium-sized saucepan, whisk cornstarch with 1/4 cup of sweet corn/coconut milk mixture to create a slurry. Add remaining sweet corn/coconut milk mixture, sweetener, sugar, turmeric (if using), and salt. Whisk until well combined.

4. Bring the mixture to a boil over medium heat, whisking constantly, until it thickens (about 3-4 minutes).

5. Once thickened, remove from heat and mix in vanilla extract.

6. Pour into 4-6 ramekins and place into a large baking dish. Fill the dish with hot water halfway up the sides of the ramekins. Bake for 40-45 minutes or until the custard is set but still jiggly in the middle.

7. Allow the custard to cool and then refrigerate for at least 2 hours.

8. Sprinkle 1 tablespoon of coconut sugar over the top of each ramekin and broil for approximately 5-7 minutes until the sugar turns into a caramelized glaze.

Tips:

  • Make sure the ramekins are deep enough to hold the bruleed sugar on top.
  • The turmeric is optional, but it gives the custard a beautiful yellow color.
  • To make sure the sugar doesn't burn, keep a close eye on it under the broiler. It can go from perfectly caramelized to burnt quickly.
  • Don't skip the step of refrigerating the custard before adding the sugar on top. This will ensure a perfect texture.

Enjoy this Sweet Corn Creme Brulee as a unique ending to any meal. Don't be afraid to get creative with different toppings such as fresh berries or a dollop of coconut whipped cream. Your guests will be impressed with your culinary skills and will be dying for the recipe. Sweet Corn Creme Brulee
